Merlot Collio DOC produced by the Paolo Caccese farm, located in Cormons, in the heart of the Goriziano Collio. The vintage shown is 2020. Characteristics of the wine Sensory Profile: It has an intense ruby red colour. The nose offers notes of red fruits (raspberry, blackberry, blueberry), vanilla and balsamic or floral scents, with a finish that can recall tobacco. On the palate it is harmonious and aromatic. Alcohol content: 14.0% vol (as visible on the label). Grape variety: 100% Merlot, grown on marly-sandy soils typical of the area (locally called "ponca"). Recommended Pairings This wine lends itself well to accompany structured dishes of northern cuisine and not only: Meats: Roasts, red meats, poultry and game. First courses: Pasta with meat sauces. Cheeses: Medium and long ageing cheeses Sauvignon Collio DOC 2021 produced by the Paolo Caccese winery, located in Pradis di Cormons, in Friuli-Venezia Giulia. This white wine is characterised by: Aromatic profile: It has typical scents of sage, tomato leaf and elderberry. Other notes described include green pepper, balm and pomegranate. Taste: On the palate it is dry, full-bodied and savoury, with an excellent correspondence between aromas and flavour. Technical characteristics: It has an alcohol content of 14.0% vol and is bottled in 75 cl bottles [Image]. Recommended pairings: It goes well with fish first courses, tasty vegetable flans, egg dishes and roasted fish. The ideal serving temperature is about 12° C. The Paolo Caccese winery has a long tradition that dates back to 1954 and grows its grapes on marly and sandy hilly soils that benefit from the proximity to the sea.
