Brunello Riserva is aged in wood for at least three years. Alc.: 14,5% Fattoria dei Barbi’s Riserva is produced only in exceptional vintages—those capable of fully realizing Brunello’s extraordinary aging potential, which can extend beyond a century. We carefully select the most suitable casks that best align with the Fattoria dei Barbi style. It is an austere Brunello—grand in every respect and possessing extreme elegance. After crushing and destemming, the grapes underwent rapid cooling to 16°C in a CO2-protected environment. This process of cooling the grape skins facilitates greater extraction of anthocyanins and polyphenols. Standard alcoholic fermentation lasted approximately 16 to 17 days at a controlled temperature of 27–28°C. Racking was followed by malolactic fermentation; the wine was then placed in small-to-medium-sized wooden vessels (2.25 hl – 15 hl) before being transferred to larger casks. The Brunello Riserva is aged in wood for at least three years and refined in the bottle for a minimum of six months.
